CHRISTMAS BISCUITS

Ideal for leaving out for Father Christmas, hanging on the tree, or for the whole family to enjoy, baking is the perfect activity for little ones to get involved with.

INGREDIENTS

300g plain flour (plus more for dusting)

Pinch of salt

1 tsp baking powder

1 tsp ground cinnamon

¼ tsp ground cloves

2 tsp freshly ground black pepper

100g soft butter

100g soft dark brown sugar

2 large eggs (beaten)

4 tbsp runny honey

300g instant royal icing (from packet)

Edible glitter or metallic balls

METHOD

Line two baking sheets with parchment and preheat the oven to 170°C/150°C Fan/Gas 3.
Combine the flour, salt, baking powder, cinnamon, cloves and pepper in a food processor. Then add the butter, sugar, beaten eggs and runny honey.
Dust a work surface with flour, roll out the mixture, also floured, to about 5mm and cut out your shapes with festive cutters of your choice.
Arrange them on the lined baking sheets and cook for about 20 minutes. Then transfer to a wire rack and leave to cool.
To make the icing, beat the ready-made mixture until it’s thick enough to be able to cover the biscuits with a blanket of white.
Carefully ice the cold biscuits, using a teaspoon and scatter sparkles, or sprinkles, as you like. When the icing is set, enjoy!
