Lemon posset with amaretti

Makes 4

Ingredients

Amaretti base:
12 amaretti cookies, crushed

Posset:
7fl.oz thickened cream
0.7oz golden caster sugar
1 lemon, zested and juiced

Topping:
2fl.oz Greek yogurt
2fl.oz thickened cream
4 sprigs thyme (optional)

Method

  1. Spoon half of the crushed amaretti cookies into the bottom of four goblet glasses.
    1. To make the posset layer, put the cream, sugar and lemon zest into a pan, bring to the boil, then simmer for 3 minutes. Take off the heat, stir in the lemon juice, then pour through a fine sieve into a jug. Pour into the glasses on top of the amaretti cookie layer and chill for three to four hours, or until you need them.
    2. Once chilled, spoon the remaining crushed amaretti biscuits on top of the posset layer.
    3. To make the topping, whip the yogurt and cream to soft peaks using either an electric, or hand, whisk and spoon on top. Finally, garnish with a sprig of thyme.
