LAST-OF-THE-SUMMER SUPPERS

Make the very most of the golden hours, before shorter days set in, with a feast to rival a Mediterranean wedding banquet – ideal for a weekend gathering. Lay a crisp white tablecloth, dot it with green foliage, fine china and glistening flatware – then let the food do the talking. All that’s missing is a sunshine-inspired spritz to toast the occasion.

ROASTED CARROTS WITH WALNUTS & FETA

Serves 6-8

Ingredients

2 cups chopped walnuts
5 cups small rainbow carrots, peeled
3 tbsp maple syrup
2 tbsp extra-virgin olive oil
1 tbsp smoked paprika
½ tsp salt Freshly ground pepper
1/3 cup feta

Method

  1. Preheat the oven to 355°F/fan 320°C/gas 4. Spread the walnuts out on a large, lined baking tray and roast for 10-12 minutes, until toasted golden brown. Then set aside.
  2. Increase the oven temperature to 430°F/fan 390°F/gas 4 and line two large baking trays.
  3. In a large bowl, toss the carrots with maple syrup, olive oil, smoked paprika, salt and pepper.
  4. Spread the carrots out in a single layer and roast for 22-28 minutes, until they are tender when pierced with a fork. Make sure to toss the vegetables halfway through and rotate the two baking trays in the oven.
  5. Transfer the carrots to a serving platter, top with the roasted walnuts and crumble over the feta
