Mother’s Day Lemon Drizzle & Poppyseed Cake with Cook School

What could be better for Mother’s Day than a bake the whole family can enjoy? Whether you make it for mum, or spend quality time making it with her, it’s sure to be enjoyed by all on the day.

Cook School are a not-for-profit organisation that aims to equip young people with the skills, knowledge and confidence to cook delicious, affordable and healthy meals at home. Working with primary and secondary schools across the UK, they’ve hosted in-person and online cook-along classes for more than 250,000 students to date, all featuring straightforward ingredients, equipment and easy-to-follow recipes. Equipment:

Loaf tin
Baking paper
Measuring jug
Weighing scales
Grater
Teaspoon
Mixing bowl
Small bowl

Ingredients:

For the loaf cake:
225g softened butter
225g golden caster sugar
Zest of 1½ lemons
4 free-range eggs
225g self-raising flour
½ teaspoon baking powder

For the drizzle:
75g caster sugar
The juice of 1½ lemons

Method:

  1. Preheat the oven to 180°C/ 160 °C Fan/ Gas 4.

  2. Butter and line the loaf tray with baking paper, leaving enough length to fold over the long edges of the tray.

  3. Add the butter, sugar and lemon zest to the large mixing bowl. Beat until pale and fluffy.

  4. Add one egg with a little of the flour and mix slowly. Repeat this process for all four eggs.

  5. Add the remaining flour along with the baking powder and fold together until smooth.

  6. Spoon the mixture into the loaf tin and bake for 40–45 minutes or until golden.

  7. After 40–45 minutes, slide a skewer or a knife through the middle of the cake to check it comes out clean.

  8. While your cake cools slightly in the tin, mix together the caster sugar with the lemon juice to make the drizzle.

  9. While still warm, poke holes in the cake and pour over the drizzle.

  10. Leave to cool completely in the tin.

  11. Use the folded over edge of baking paper to lift the cake out of the loaf tin and serve.
